Chemical criteria only (IOC trade standard) — official grading additionally requires a sensory panel. Limits: extra virgin ≤ 0.8 % acidity & ≤ 20 meq; virgin ≤ 2.0 % & ≤ 20 meq. For reference, Tesoro del Rio Excellence typically posts ≤ 0.3 % / ≤ 10 meq / 500+ mg/kg.
